Morihei Yanagiba (Sashimi Knife), 300mm:

About Yanagiba: A specialty Japanese style slicing knife. Great for fish as the length ensures you can slice from heel to toe with one cut.
This Yanagiba has a hallow grind on the back side and a large primary bevel on the front side. ( making a sort of hook shaped edge that is extremely fine and sharp!)

This blade is made from Shirogami White #2 steel and is a perfect professional use or serious home sushi chefs .

Blue steel and super blue are not as easy to sharpen due to the addition of a small amount of chromium.
White #2 is ideal for sharpening and less brittle than white #1.
Making a great all round work horse that is easier to sharpen and maintain than most Sashimi knives.

It comes with a simple Ho Wood “D” shaped Handle.
