This stunning range is another refined knife range by Akifusa.
Ohishi is also the name of the small village near the famous Mount Fuji, where the Akifusa business is located.
The range has a subtle Nashiji finsih (rough look cladding)
This knife is stainless clad but still has a Blue steel #2 core
meaning: you get the best of both worlds.
The cutting power on these knifes are some of the best I’ve seen and definitely the best in their price range.
This knife has a smooth D-shaped Ebony wood handle and a Hitachi Blue #2 steel core with stainless cladding.
Stainless steel is regarded by many as not ideal for holding an edge and sharpness. (subject to debate)
A lot of the prized Japanese steels lack stainless steel.
They have little corrosion resistance and may rust easily if mistreated.
This knife is stainless clad but still has a Blue steel #2 core meaning you get the best of both worlds.
A high carbon cutting edge and some corrosion resistance on the outside.
The core steel will darken over time (patina) with use.
