Ohishi Nakiri (Vegetable Knife) 165mm, Ginsan:

Ohishi Ginsan 3 steel series is a elegant, western handled knife with Japanese steel.
Ginsan steel is one of the best high carbon yet corrosion resistant steels used in knife making and one of Japan's best.
It is a fantastic stainless steel with a high amount of carbon.
If heat treated correctly it can equal any carbon steel. (Subject to debate)

*Ohishi is also the name of the small village near the famous Mount Fuji, where the Akifusa business is located.

It is perfect for a busy professional chef or home cook.
Ginsan steel makes knife care easy to for while not substituting quality.

This is a great workhorse.
Easy to care for and maintain. Great cutting power but still a workhorse.
Perfect for a busy kitchen.
