Introducing Round 7 of our exclusive collaboration—where traditional Japanese blade-making meets refined Australian design. This limited-edition release brings together the renowned Ohishi blades by Tadafusa and the expert craftsmanship of Brook Turner, one of Australia’s most respected custom knife makers.
About the Handles

Only 6 Made – Each One Unique
This is a limited batch of just six knives, each featuring a handmade Japanese blade paired with a custom handle made in Australia. No two knives are the same—crafted for chefs and collectors who value performance, design, and exclusivity.
About the Blade
Each blade is handmade in Sanjo, Japan, by the expert craftsmen at Tadafusa, who bring over 60 years of knife-making experience to every piece. The construction features a Hitachi Aogami (Blue) #2 steel core, known for its razor-sharp edge and edge retention, clad in stainless steel with a traditional Nashiji (Textured) finish.
This hybrid construction offers the best of both worlds:
-
A high-performance cutting edge from the Blue #2 steel core
-
Stainless cladding that offers increased corrosion resistance
Brook Turner x Ohishi by Tadafusa – a perfect fusion of Japanese steel performance and Australian handle artistry, now available in extremely limited quantity.
Leigh’s 2 cents:
These knives sit in a unique space.
You get the cutting performance of a Japanese knife with the individuality of a custom handle. Every knife is different, and once it’s sold, there won’t be another exactly like it.
If you want something genuinely unique that still performs in a real kitchen, this collection is well worth a look.

About Use
Hi, my name is Leigh, and I’m a chef from Newcastle, Australia.
I’ve been cooking professionally for over 20 years in some of Australia’s top restaurants, and I’m currently cooking at The Signal Box in Newcastle.
Over the years (since 2018), I’ve put together a small collection of high-quality Japanese knives and whetstones that I personally recommend. Basically, if I wouldn’t use it in a professional kitchen, I don’t sell it. Read More
