Ohishi Ginsan 3 steel series is a elegant, western handled knife with Japanese steel.
Ginsan steel is one of the best high carbon yet corrosion resistant steels used in knife making and one of Japan's best.
It is a fantastic stainless steel with a high amount of carbon.
If heat treated correctly it can equal any carbon steel. (Subject to debate)
*Ohishi is also the name of the small village near the famous Mount Fuji, where the Akifusa business is located.

Easy to care for and maintain. Great cutting power but still a workhorse.
Perfect for a busy kitchen.
