Leigh's 2 Cents
This is the setup I recommend for people whose knives are already in reasonable condition.
If you're constantly battling blunt knives, you'll probably be happier starting with the 320 / 1000 / 5000 set. A coarse stone removes metal much faster and makes sharpening far easier to learn.
If your knives are already sharp and just need regular maintenance, this combination is hard to beat.
Consider adding an 320grit, Atoma flattening plate or strop to complete the setup.

About Use
Hi, my name is Leigh, and I’m a chef from Newcastle, Australia.
I’ve been cooking professionally for over 20 years in some of Australia’s top restaurants, and I’m currently cooking at The Signal Box in Newcastle.
Over the years (since 2018), I’ve put together a small collection of high-quality Japanese knives and whetstones that I personally recommend. Basically, if I wouldn’t use it in a professional kitchen, I don’t sell it. Read More
