Tojiro Togrip Knife Sharpening Guide Clip

The Tojiro Togrip is a simple sharpening guide designed to help you hold a consistent angle when sharpening on a whetstone.

It is a good starting point if you are new to freehand sharpening, struggling to keep a steady angle, or not sure where to begin.

This updated version has two sharpening slots — one for smaller knives and one for larger kitchen knives.

Quick Points

  • Helps maintain a consistent sharpening angle

  • Useful for beginners learning whetstone sharpening

  • Two slots for different knife sizes

  • Helps build muscle memory for freehand sharpening

  • Simple clip-on design

  • Not suitable for single bevel knives

Why This Works

One of the hardest parts of sharpening is holding the knife at a consistent angle.

The Tojiro Togrip clips onto the spine of the knife and helps guide the blade position while you sharpen. This makes it easier to understand the angle and build confidence on the stone.

It will not replace proper technique, but it can make the learning process much easier.

With practice, you should be able to move towards freehand sharpening without relying on the guide.

Real Use

Use the small slot for smaller knives like petty knives.

Use the larger slot for normal kitchen knives such as:

  • Chef knives

  • Gyuto

  • Santoku

  • Nakiri

  • Utility knives

This is especially useful for home cooks or beginners who have just bought their first whetstone and want more confidence getting started.

Important Notes

This guide is designed for double bevel knives only.

It is not suitable for single bevel Japanese knives such as yanagiba, deba or traditional sashimi knives.

The clip may mark or scratch some blades where it attaches. If you are worried about scratches, apply a small piece of masking tape to the spine of the knife before attaching the guide.

Leigh’s 2 Cents

I still recommend learning to sharpen freehand, but this is a useful tool if you are just starting out.

Keeping a consistent angle is what most beginners struggle with. The Togrip gives you a reference point and helps build the muscle memory needed for better sharpening.

It is not magic, and it will not fix every sharpening mistake, but it can make the first few sessions on a whetstone much less frustrating.

About Use

Hi, my name is Leigh, and I’m a chef from Newcastle, Australia.

I’ve been cooking professionally for over 20 years in some of Australia’s top restaurants, and I’m currently cooking at The Signal Box in Newcastle.

Over the years (since 2018), I’ve put together a small collection of high-quality Japanese knives and whetstones that I personally recommend. Basically, if I wouldn’t use it in a professional kitchen, I don’t sell it. Read More
