Naniwa Whetstone Set 1000/3000

If you want a simple, budget-friendly sharpening setup for maintaining kitchen knives, this is a great place to start.

This set includes two separate Naniwa whetstones:

  • 1000 grit → your main sharpening stone

  • 3000 grit → refines and finishes the edge

Instead of making one combination stone, Naniwa has done something smarter: two separate stones in one pack.

You also get a storage case that doubles as a sharpening stand and drying solution.

Simple, practical, and better than most basic combination stones.

Why this works

  • 1000 grit → the main sharpening stone for everyday sharpening

  • 3000 grit → refines the edge for a smoother finish

  • Two separate stones instead of one glued combination stone

  • Includes storage case / sharpening stand

  • Great value for beginners and home cooks

  • A good starting point if your knives are already in reasonable condition

Real use

A 1000/3000 setup is ideal for maintaining knives that are already in decent shape.

The 1000 grit does the main sharpening work, while the 3000 grit refines the edge and improves the final cutting feel.

This is a good option if you have newer knives, lightly dull knives, or you want a simple setup to maintain your edge at home.

The main limitation is that there is no coarse stone included.

If your knife is very blunt, chipped, damaged, or hasn’t been sharpened in years, a 1000 grit stone can take a long time to raise a burr. In that case, I recommend adding a coarse stone around 300–500 grit to make repairs and edge reshaping much easier.

Why separate stones are better than most combination stones

Combination stones can be useful, but they do have drawbacks.

Because each side of a combination stone is a different grit, each side can wear at a different rate.

They also shouldn’t always be fully soaked, as the two sides can expand differently and may eventually crack or separate.

This Naniwa set avoids those issues by giving you two separate stones that are designed to work together.

Same idea as a combination stone — but done properly.

Who it’s for

  • Home cooks learning whetstone sharpening

  • First-time sharpeners with knives in reasonable condition

  • People maintaining Japanese or Western kitchen knives

  • Anyone wanting a simple 1000/3000 sharpening setup

  • Cooks who don’t want to spend big on premium stones yet

Leigh’s 2 cents

This is a really smart budget sharpening setup.

I like that Naniwa has kept the stones separate instead of making a standard combination stone. It gives you more flexibility, better drying, and avoids some of the common issues that come with glued combo stones.

For regular maintenance, 1000/3000 makes sense.

Just be aware: if your knife is properly blunt, old, chipped, or needs reshaping, I’d strongly recommend adding a coarse stone. A 1000 grit stone will get there eventually, but you’ll spend a lot more time trying to raise a burr.

If you want the bare minimum for maintaining knives, this set works.

If you want the better beginner setup for old blunt knives, go for the Naniwa 220/1000/3000 set instead.

Important

All whetstones wear unevenly over time and need flattening regularly.

I strongly recommend adding a flattening stone or lapping plate alongside this setup.

Flat stone = good sharpening.

If you’re new to sharpening, I also recommend using a Tojiro sharpening guide to help with angle control.

What’s Included

  • Naniwa 1000 grit whetstone

  • Naniwa 3000 grit whetstone

  • Storage case / sharpening stand

Although the included stand works well, I still recommend using a proper sharpening station or sink bridge for the best experience.

Who should buy the 220/1000/3000 set instead?

Buy this 1000/3000 set if:

  • your knives are already in reasonable condition

  • you mainly want edge maintenance

  • you want a simple and affordable starter setup

Choose the 220/1000/3000 set if:

  • you’re learning on old knives

  • your knives are very blunt

  • you need to repair chips

  • you want a more complete beginner sharpening setup

Care Instructions

  • Soak for about 15 minutes before use

  • Dry after use

  • Store in a cool, dry place out of direct sunlight

  • Flatten regularly to avoid the stones becoming uneven

About Use

Hi, my name is Leigh, and I’m a chef from Newcastle, Australia.

I’ve been cooking professionally for over 20 years in some of Australia’s top restaurants, and I’m currently cooking at The Signal Box in Newcastle.

Over the years (since 2018), I’ve put together a small collection of high-quality Japanese knives and whetstones that I personally recommend. Basically, if I wouldn’t use it in a professional kitchen, I don’t sell it. Read More
