OK, so the main problem in knife sharpening is there isn't any one stone that will do everything.

You normally need a rough, medium and fine stone to get decent results. 

A Naniwa 1000/3000 or King 1000/6000 will get you started if you have a new knife.
...........and here is the next issue: I always advise people to practice on their old knives before trying their luck on a recently bought knife.
If you have a old knife the 1000 grit isn't going to do the job or you will spend a lot of time trying to get a burr on your super old, dull knife.

Better than your normal combination whetstone.

The whetstone comes in a plastic case that also doubles as a stand! Also the case draining holes in the bottom for drying, post sharpening session.

Care Instructions
Do Shapton stones need to be soaked in water before use?

No, Shapton stones do not need to be soaked except the very first time after purchase. Shapton dose recommend that on first use, you pre-soak the stone in water for five to six minutes to secure even smoother sharpening.

Which face of the sharpening stones should I use?
You can use either face, but we recommend that you start on the side where no letters have been printed.

Does a build up of slurry create any problems when sharpening?
It is fine to sharpen blades without washing away the slurry, but as Shapton sharpening stones have a high abrasive content, they can be used equally well with no slurry present.

What can I do to keep my stone flat and even?
Mark diagonal lines in pencil across the stone (creating a diamond pattern) Use a flattening stone in circular motion until the lines disappear.

Atoma lapping plate:

This is one of the best flattening and whetstone maintenance products out.

As whetstones are used they become wrapped and uneven.
Once they are used enough they can become useless if not flattened. (especially important for single edged knives)
This is where lapping plates are come in!

The problem is: most cheaper stone lapping plates can wear just like the stones themselves can.
Lapping plates can also become wrapped and useless if not flattened.

Unlike other flattening stones this one will not become even over time.
